Healthy Recipe Idea: Winter Vegetable Soup
A steaming bowl of warm vegetable soup, perfect on a cold winter day.
Ingredients:
1tbsp olive oil
1 leek, sliced
1 onion, diced
2 celery stalks, sliced
1 small potato, diced
1 turnip, diced
1 carrot, diced
2 garlic cloves, crushed
1.25 litres vegetable stock
200g spinach, shredded
3 spring onions, sliced thin
salt & pepper to taste
Method:
1. Cook the leak with the olive oil in a frying pan until soft (around 5 minutes).
2. Add the celery, onion, turnip, carrot, potato and garlic and cook for 10 minutes
3. Pour in the stock and bring to the boil
4. Cover and simmer, stirring occasionally until the vegetables are tender (20-30 minutes).
5. Add the spinach and spring onions. Cook for 3-5 minutes until the spinach is wilted but still strong green in colour.
6. Season with salt & pepper to taste and serve hot.
