Healthy Recipe Idea: Tomato Soup

A lovely homely soup, perfect for any time of the year.
Tomatoes have so many health benefits:
- Rich in vitamins and minerals 
- Protect against cardiovascular diseases 
- Improve digestion 
- Improve skin 
- Stimulate blood circulation 
- Reduce cholesterol 
- Reduce blood pressure 
- Protect kidneys 
- Prevent urinary tract infections 
- Prevent Gallstones 
- Anti-oxidents to fight off cancer 
- Prevent premature ageing 
- Reduce inflammation 
- Improve vision 
Ingredients:
- 2 onions, chopped 
- 1 garlic clove, crushed 
- 1tbsp plain flour 
- 1.25 litres vegetable stock 
- 2 x 400g cans tomatoes 
- Salt and pepper, to taste 
- 3 tbsp pesto (optional). 
Method:
- Pour the stock into the saucepan and add the chopped onion. Cook the onion until soft. 
- Add the tomatoes and juices. 
- Season with salt and pepper and bring to the boil. Cover the pan and simmer gently for 20 minutes. 
- Puree the soup with a blender until smooth. 
- Return the soup to the rinsed out pan and add the pesto (optional). Heat the soup through and add seasoning to taste. 
- Serve the soup warm.
