Healthy Recipe Idea: Tomato Soup
A lovely homely soup, perfect for any time of the year.
Tomatoes have so many health benefits:
Rich in vitamins and minerals

Reduce blood pressure

Ingredients:
2 onions, chopped
1 garlic clove, crushed
1tbsp plain flour
1.25 litres vegetable stock
2 x 400g cans tomatoes
Salt and pepper, to taste
3 tbsp pesto (optional).
Method:
Pour the stock into the saucepan and add the chopped onion. Cook the onion until soft.
Add the tomatoes and juices.
Season with salt and pepper and bring to the boil. Cover the pan and simmer gently for 20 minutes.
Puree the soup with a blender until smooth.
Return the soup to the rinsed out pan and add the pesto (optional). Heat the soup through and add seasoning to taste.
Serve the soup warm.
